Sous Chef - Olina, Tokyo

Groupe Tamara, a hospitality group headquartered in France and already present in Europe and the US, is currently expanding into Japan by opening Olina, a gastronomic restaurant with French chef Olivier Garcia.

Olina is located in close proximity of Azabujuban, and features French-inspired cuisine made using local ingredients and techniques, and an eclectic selection of European craft wines.

We are hiring a sous-chef to assist chef Olivier in producing and delivering the restaurant’s food offering.

Key responsibilities

  • Participate, at an extent depending on his/her personality, skills and experience, to the creation of the menu

  • Ensure, together with the other sous-chef and under the leadership of the chef, the execution of the menu

  • Execute the mise-en-place and other support tasks for the chef

  • Raw materials: order management to ensure the necessary supplies, stock monitoring, quality check the deliveries

  • Create technical sheet for the recipes

  • Train and manage back house stuff under his/her direction if applicable

Experience & Skills

  • At least 1 year experience as sous-chef, or recent graduate of a cooking school

  • Knowledge of French and Japanese elementary cooking technics; of various heating technics; and of products’ seasonality

  • Familiarity with hygiene standards

  • Organised, clean, team player, eager to learn

  • Basic English
